  • Meat hammer
  • 1 lbs boneless skinless chicken breast
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1 oz proscuitto
  • 2 oz swiss cheese
  • 2 tbsp all purpose flour
  • 1 tsp olive oil
  1. Preheat the oven to 375F.
  2. Slice each chicken breast in half lengthwise.
  3. Place the chicken between 2 sheets of wax paper.
  4. Flatten the chicken to ¼” to ½” thickness.
  5. Season one side of the flattened chicken breast with salt and pepper.
  6. Lay a slice of prosciutto on each slice.
  7. Lay a thin slice of swiss cheese on top of the slice of prosciutto.
  8. Roll up the chicken with the prosciutto and swiss cheese inside, then secure together with a toothpick or two as required.
  9. Brush the outside of the rolled up chicken breasts with olive oil.
  10. Put bread crumbs in a shallow bowl and roll each chicken roll to evenly coat.
  11. Place the rolled up chicken breast on a baking pan.
  12. Bake for 30 minutes or until internal temperature reads between 165F – 175F.
