Vegetable Soup
Ingredients
- 2 cloves Garlic, minced
- 2 Carrots, sliced and halved
- 2 Zucchini, sliced and halved
- 2 cups Savoy Cabbage, shredded
- 2 cups Cauliflower florets, halved.
- 2 cups Broccoli
- 1 Onion, diced
- 1 Red pepper, diced
- 1 Celery stalk, sliced and halved
- 2 tsp Thyme
- 6 cups Vegetable broth
- 2 tsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp lemon juice
Instructions
- Put everything in a large stock pot, simmer for 15-20 minutes.
