Ingredients
- 2 cloved garlic, minced
- 2 carrots, halved and sliced
- 2 zucchini, halved and sliced
- 2 cups savoy cabbage, shredded
- 2 cups cauliflower florets, halved
- 2 cups broccoli
- 1 onion, diced
- 1 red pepper, diced
- 1 celery stalk, sliced and halved
- 2 tsp thyme
- 6 cups vegetable broth
- 2 tsp fresh parsley, chopped
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp lemon juice
Instructions
- Put everything into a large stock pot and simmer for 15-20 minutes.
