Ingredients
- 2 cups whole wheat flour
- ⅔ cup all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tbsp ground cinnamon
- 3 egg whites
- 1 whole egg
- 1 cup sugar
- 2 tsp vanilla extract
- ⅓ cup canola oil
- ⅔ cup unsweetened applesauce
- 2 cups zucchini, peeled, grated, and drained
- ½ cup chopped walnuts
Instructions
- Preheat the oven to 350F.
- Coat two 8×4 loaf pans with cooking spray or butter.
- Sift together the whole wheat flour, all purpose flour, salt, baking soda, baking powder, and cinnamon into a bowl.
- In a separate bowl, beat the egg whites until they become frothy. Add in the whole egg, sugar, vanilla, oil and applesauce. Beat until thoroughly combined. Beat in the zucchini.
- Add the dry ingredients into the wet ingredients, folding gently not to ruin the egg whites.
- Fold in the nuts.
- Pour batter in prepared pans.
- Bake for 50-60 minutes. Check doneness by inserting a toothpick into the center until it comes out clean.
