Ingredients
  • 2 cups whole wheat flour
  • ⅔ cup all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tbsp ground cinnamon
  • 3 egg whites
  • 1 whole egg
  • 1 cup sugar
  • 2 tsp vanilla extract
  • ⅓ cup canola oil
  • ⅔ cup unsweetened applesauce
  • 2 cups zucchini, peeled, grated, and drained
  • ½ cup chopped walnuts
Instructions
  1. Preheat the oven to 350F.
  2.  Coat two 8×4 loaf pans with cooking spray or butter.
  3. Sift together the whole wheat flour, all purpose flour, salt, baking soda, baking powder, and cinnamon into a bowl.
  4. In a separate bowl, beat the egg whites until they become frothy. Add in the whole egg, sugar, vanilla, oil and applesauce. Beat until thoroughly combined. Beat in the zucchini.
  5. Add the dry ingredients into the wet ingredients, folding gently not to ruin the egg whites.
  6. Fold in the nuts.
  7. Pour batter in prepared pans.
  8. Bake for 50-60 minutes. Check doneness by inserting a toothpick into the center until it comes out clean.
