Zucchini Bread
Ingredients
- 2 Cups Whole Wheat Flour
- 2/3 Cup All Purpose Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 tbsp Ground Cinnamon
- 3 Egg Whites
- 1 Whole Egg
- 1 Cup Sugar
- 2 tsp Vanilla Extract
- 1/3 Cup Canola Oil
- 2/3 Cup unsweetened applesauce
- 2 Cups Zucchini, peeled, grated, and drained.
- 1/2 Cup Chopped Walnuts
Instructions
- Preheat Oven to 350 Degrees
- coat 2 8×4 loaf pans with cooking spray
- Sift together whole wheat flour, all purpose flour, salt, baking soda, baking powder, and cinnamon in a bowl
- In another bowl beat egg whites until frothy, add egg, sugar, vanilla extract, oil, and applesauce, beat until thoroughly combined, then beat in zucchini.
- Add dry ingredients to egg mixture and mix well.
- Fold in Nuts
- Pour batter in prepared pans
- bake for 50-60 minutes, until toothpick inserted in middle of loaf comes out clean.
