Ingredients
- 1 lbs boneless skinless chicken breast
- ½ tsp black pepper
- ¼ tsp salt
- 1 oz proscuitto
- 2 oz swiss cheese
- 2 tbsp all purpose flour
- 1 tsp olive oil
Instructions
- Preheat the oven to 375F.
- Slice each chicken breast in half lengthwise.
- Place the chicken between 2 sheets of wax paper.
- Flatten the chicken to ¼” to ½” thickness.
- Season one side of the flattened chicken breast with salt and pepper.
- Lay a slice of prosciutto on each slice.
- Lay a thin slice of swiss cheese on top of the slice of prosciutto.
- Roll up the chicken with the prosciutto and swiss cheese inside, then secure together with a toothpick or two as required.
- Brush the outside of the rolled up chicken breasts with olive oil.
- Put bread crumbs in a shallow bowl and roll each chicken roll to evenly coat.
- Place the rolled up chicken breast on a baking pan.
- Bake for 30 minutes or until internal temperature reads between 165F – 175F.
