Chicken Cordon Bleu

  • Meat hammer


  • 1 lb Boneless skinless Chicken Breast
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 oz prosciutto
  • 2 oz swiss cheese
  • 2 tbsp All purpose flour
  • 1 tbsp olive oil


  • Preheat oven to 375 degrees
  • Slice each chicken breast in half lengthwise
  • Place chicken between 2 sheets of wax paper
  • flatten chicken to 1/4 to 1/2 inch thickness
  • season one side of the flattened chicken breast slices with salt and pepper
  • lay a slice of proscuitto on each slice
  • lay a thin slice of swiss cheese on top of the slice of prosciutto
  • Roll up the chicken with the proscuitto and swiss cheese inside, hold together with a toothpick or two as required.
  • brush the outside of the rolled up chicken breast with olive oil
  • put bread crumbs in a shallow bowl and roll each rolled up chicken breast to evenly coat.
  • Place the rolled up chicken breast on a baking pan
  • Bake for 30 mins and/or until the internal temperature indicates that it's done
